Westminster Kingsway College (@Westking) has partnered New Covent Garden Market to launch new seasonal menus at its two restaurants using the market’s fruit and vegetables.

Trainee chefs at The Brasserie and fine dining Escoffier restaurants at The Vincent Rooms are using the produce to create flavoursome vegetarian dishes.

Diners can enjoy four courses at the Escoffier and three courses at The Brasserie with both restaurants’ dishes being refreshed weekly in line with seasonal availability.

WestKing, which boasts Jamie Oliver, Ainsley Harriot and Sophie Wright among its alumni, reopened its restaurants at the start of the new term after being closed at the height of the pandemic.

The college already receives deliveries from New Covent Garden Market wholesalers, but students can now access to the first batches of produce when they arrive at the market from British growers.

Jose Souto, Chef Lecturer in Culinary Arts said:

“The students hugely value having access to the array of fruit and veg from New Covent Garden Market and the launch of the new menu will give them increased access to and understanding of the very best seasonal produce out there.

“Great quality seasonal produce has the power to truly elevate the taste and presentation of a dish and we’re looking forward to welcoming back diners and introducing them to the New Covent Garden Market Menu.”

New Covent Garden Market is the largest fresh produce market in the UK and typically has more than 650 varieties of fresh fruit and vegetables available at any one time.

It is unrivalled when it comes to sourcing the best seasonal produce from the UK and around the world with many of its traders providing Michelin star restaurants across the capital.

Rebecca Barrett, Head of Strategy, Partnerships and Communications at Covent Garden Market Authority, said:

“We have a long-standing relationship with the college and each year welcome the students on to the market to experience the world behind the fresh produce they cook with.

“We’re thrilled to be building on this partnership with the launch of the New Covent Garden Market Menu and we hope the students enjoy learning new skills with the very best of British produce at their fingertips.’
